In my family, Wednesday means one thing: Pizza Night. We started this tradition about five years ago to accompany our other favorite Wednesday night tradition – Survivor (though we are currently between seasons.) The beauty is that it’s easy to make, customizable for each person, and can be as healthy or as decadent as you want to make it. We enjoy it so much that we all wake up on Wednesday morning excited. And my fifteen-year-old daughter, Hannah, recently declared that she will be continuing the tradition with her own kids A LONG TIME from now.
For those of you who want to give it a try: here’s the recipe:
Mix this all together and the add the following:
Knead the dough for six or seven minutes — adding a little more flour if necessary so it’s not sticky. Then stick it in a sealed plastic bag or bowl and let it rise for an hour.
We usually bake the crust separately for about six minutes at 425 degrees before putting on the toppings. Rather than tomato sauce, we use pesto as the base. I load my section with broccoli, onion, mushroom and a touch of feta. My daughter smothers hers in mozzarella and my husband does a mix of everything.
Then we stick it back into the oven for another seven or so minutes and enjoy.
